Processing Method
Our Brazilian beans are processed via the natural method, also known as the dry process or unwashed process. The coffee bean is located within the fruit of the coffee (the cherry) which is left in the sun or a drying machine to dry and ripen. This process takes anywhere from 3-8 weeks. Care must be taken during drying to ensure mold does not form. To prevent molding, the coffee cherries are turned and raked periodically. After the cherry has dried, the bean inside is removed, sorted, and graded. This process gives the bean fruity and sweet notes from the natural fermentation that occurs. This process yields beans that produce full body and density. Perfectly roasted, naturally processed beans provide a good platform for any kind of coffee blend or a classic espresso.

It will carry its flavor for a max of 6 weeks. For Colombia, a lighter roast, its aromas will remain present for up to 1 month from date of roast and the distinctive flavors up to 10 weeks.
