Processing Method

Our Ethiopia beans are processed via the washed processing method. In this method, the cherry (fruit of the coffee) is removed. The cherry-free beans are then placed in tanks to ferment for 24-72 hours. The fermentation allows for the beans to absorb the natural sugars, which give this bean a fruity and floral aroma and taste. When the fermentation process is complete, the beans are dried. Perfectly roasted washed beans deliver bright and delicate acidity, unique fruitiness reflecting the region distinctively, a balanced sweetness, and a clear aftertaste. This particular bean has a mild citrus flavor and floral aroma with a gentle but vibrant acidity, rich, and pleasant mouthfeel. This bean is sweet and flavor-saturated with a complexly developing finish.
