Processing Method
Our Colombian beans are processed via a method called the washed or wet process. The fruit of the coffee (the cherry) is removed at the very beginning of this process either by high-pressure water jets or with large blenders. The cherry-free beans are then placed in tanks to ferment. When the fermentation process is complete, the beans are laid out to dry and then graded. Perfectly roasted washed beans deliver a bright and delicate acidity, unique fruitiness, balanced sweetness, and a clear aftertaste.

What is the optimal time to drink your coffee after roast date? — For our Brazil and Sumatra variety, 4 to 14 days after roast is optimal time frame for fresh aromas. It will carry its flavor for a max of 6 weeks. For Colombia, a lighter roast, its aromas will remain present for up to 1 month from date of roast and the distinctive flavors up to 10 weeks. However, all estimates are highly dependent on the coffee bean’s storage conditions.
