The Details


Our India beans come from the southwest Malabar Coast of India. They are called “Monsooned Malabar” due to the process in which they undergo and the region of India where they are from. The monsoon process is now unique to the Malabar Coast of India; however, it began when coffee was first introduced in Europe.

The coffee shipments required a long sea voyage. During transport, the beans were exposed to the salty sea air which gave it a unique, aged flavor. When the trade route was shortened due to the opening of the Suez Canal, the beans did not undergo this natural aging process and Europeans were not as fond of the flavor of the beans. The monsooned process was then introduced to meet the demand for aged coffee.

Processing Method


Our India beans are processed via the monsoon process. The coffee bean – located within the coffee cherry – are first sun-dried. After the fruit is dried, it is removed, leaving only the bean, which are then cured and sorted. The beans are placed in large, ventilated warehouses to receive exposure to the moist, monsoon winds for 12-16 weeks. During this time, the beans are raked and turned to prevent mold from growing on the moist beans. The beans absorb the moisture from the monsoon winds, which give them their puffy, light-colored appearance. They are then sorted once more to select the fully monsooned beans.

    We cannot guarantee refunds on coffee bean orders. However, if you are not satisfied with your purchase, please email administration@avaroasteria.com and an AVA Roasteria representative will get back to you with more information.

    1. What is the optimal time to drink your coffee after roast date? — For our Brazil and Sumatra variety, 4 to 14 days after roast is optimal time frame for fresh aromas. It will carry its flavor for a max of 6 weeks. For Colombia, a lighter roast, its aromas will remain present for up to 1 month from date of roast and the distinctive flavors up to 10 weeks. However, all estimates are highly dependent on the coffee bean’s storage conditions.

    2. How fresh is the coffee when I receive it? — Fresh! We roast the coffee as late as possible in order for your order to be as fresh as it possibly could be.

    3. Can you grind my coffee? — We try to accommodate all of our customer’s needs and requests. Please inquire via administration@avaroasteria.com before ordering.

    4. Is your coffee fair trade and/or organic? — Currently our coffee is neither fair trade nor organic.

    5. Is your coffee allergy free? — Yes, all of our coffee beans are free of any and all tree nuts, peanuts, fish, wheat, eggs and other common food allergies.
